Chicken Vindaloo

Vindaloo is a very popular chilli and vinegar based fiery hot dish from Goa, on the western coast of India. Vindaloo is popular not only in India, but also among the Europeans and other westerners. You can use any type of meat such as chicken, beef or pork or even with seafood in your Vindaloo. Or perhaps just make it with vegetables for the non meat eaters amoungst us.

Goa was occupied by the Portuguese for a number of years and so naturally, the Portuguese style of cooking has a marked influence on the local dishes and Indian food recipes of Goa. Some people include ‘aloo’ (potatoes) in this recipe, but the original vindaloo dishes do not have aloo. Try cooking this simple recipe for Chicken Vindaloo

Murgh Makhani

This rich, buttery, creamy north Indian dish needs no introduction, has made its place in every corner of the world. Most probably the best known of all Indian dishes, it has already claimed the fame that it deserves.

The recipe is said to have originated in a restaurant called Moti Mahal in Delhi, India. The origins of butter chicken can be traced back to a man named Kundan Lal Gujral, who ran a restaurant called Moti Mahal Delux in Peshawar before the partition of British India. With the partition of British India, Moti Mahal moved to New Delhi. Butter Chicken is regarded to have been first introduced by Moti Mahal in New Delhi.



Palak Paneer

"Palak" means spinach in Hindi and "Paneer" is a kind of semi hard cheese without salt which is very popular here in India.

The palak paneer is one of the country's most traditional recipes. Chances are that in your country you can't find the paneer, so can use any semi-hard cheese, you just have to be careful that it is not too salty because mixed with the species it would have a very unpleasant to taste. This preparation can also be done with mixtures of vegetables like cauliflower, potatoes, carrots, or would be great with diced boneless chicken.



Aloo Gobi

Those who hate cauliflower and spices do well to not waste time reading this. But their lovers are very lucky, because this is the most "cauliflowly" and spicy imaginable experience. Aloo gobi means "potatoes with cauliflower" or vice versa, because it takes the same amount of both.

Treatment of spices in Indian cuisine is complicated. Some are fried, sautéed others, others are roasted and other cooked, and you have to know when to add them. But most important is its strength and its clever combination. Do not put it all together and that's it. In India, every family has its own curry, the mix they like.



Rogan Josh

Rogan josh is an aromatic curry dish from Kashmir and is quite popular in Punjab as well as in other countries such as Pakistan, Singapore and the UK. Rogan means oil in Persian, while josh means heat, hot or passionate. Thus rogan josh means oil cooked over intense fire.

This was brought to India by the Mughals. The relentless heat that there was in the plains of India made the Mughals move frequently to Kashmir, where the indians first adopted this dish.

It is one of the introductory indian dishes, the flavor is not so exotic, which doesn't meant that the taste is not good.

It is an aromatic stew meat (usually lamb) in a sauce of yogurt, tomato and spices. It is little (or no) spicy, depending on psychopathy cook or masochism of diners, of course.



Chicken Tikka Masala

The chicken tikka masala is not a typical Indian dish, but it is clearly the world's most popular curry. It seems that the chicken tikka masala was created between 1950 and 1970 by a person from India immigrated to the UK. However, there is no standard recipe for Indian chicken tikka masala. The one common ingredient in all Indian recipes is chicken. The sauce usually contains tomato, single cream or cream of coconut and many spices. The sauce is often colored orange or red with food coloring.

The main ingredients to cook a chicken tikka masala is chicken marinated in spices and yogurt and cooked in a tandoor oven, with gravy masala ("mixture of spices"). Other dishes such as chicken tikka masala replaced by lamb, or fish.
