Chicken Tikka Masala

The chicken tikka masala is not a typical Indian dish, but it is clearly the world's most popular curry. It seems that the chicken tikka masala was created between 1950 and 1970 by a person from India immigrated to the UK. However, there is no standard recipe for Indian chicken tikka masala. The one common ingredient in all Indian recipes is chicken. The sauce usually contains tomato, single cream or cream of coconut and many spices. The sauce is often colored orange or red with food coloring.

The main ingredients to cook a chicken tikka masala is chicken marinated in spices and yogurt and cooked in a tandoor oven, with gravy masala ("mixture of spices"). Other dishes such as chicken tikka masala replaced by lamb, or fish.




Ingredients


4 chicken breasts cut into small pieces
4 tablespoons tandoori paste
2 tablespoons plain yogurt
2 tablespoons oil soup
1 cinnamon stick
6 cardamom seeds
1 large onion, chopped
3 teaspoons fresh ginger, peeled and grated
2 cloves garlic, crushed
2 teaspoons ground cumin
2 teaspoons crushed coriander seeds
1 teaspoon of turmeric
1/2 teaspoon cayenne pepper
150 g peeled tomatoes
20 cl chicken stock
2 teaspoons garam masala
juice of 1/2 lemon

Elaboration


Marinate the chicken in the tandoori paste mixed with yogurt for 2 to 12 hours. 

Heat oil in a saucepan, add the cinnamon, cardamom and onion. Fry for 5 minutes.

Add ginger, garlic, cumin, coriander, turmeric and cayenne pepper. Cook 1 minute spices and add the chicken with the marinade. Cook 3 to 4 minutes.

Add the chopped tomatoes, broth, garam masala and lemon juice. Stir and simmer 20 minutes. Remove the cinnamon stick in the end.
